おすしあわせ鮨ほり川です〜
今日は宮崎県産 クエ入りました！！
魚体２２キロの立ッ派な一本。そのうちの背中を一節と頭を分けて頂きました。
身質バッチリ✌
頭を煮込み、灰汁をすくい、エキスが溶け出して白濁し、味がしっかり出てくるまで火をかけます。
濃厚クエスープの出来上がり〜
ひとっきり仕込み終えましたが、どんな料理にするかはお楽しみ。日々旨味を重ねていくポテンシャルの高さがあるので、熟成に応じた料理に仕立てようと思います。

This is Sushi Horikawa, a happy sushi restaurant.
Today we have a grouper from Miyazaki Prefecture! !
A magnificent fish weighing 22 kg. We were given one section of the back and the head.
The meat is perfect ✌
The head is boiled, the scum is skimmed off, and the fish is cooked until the essence dissolves and the fish turns cloudy and the flavor comes out well.
The rich grouper soup is done.
We've finished preparing the fish, but it's fun to see what kind of dish we'll make with it. It has a high potential to accumulate flavor every day, so we're going to make it into a dish that matches the aging process.
